Put the kiwi fruit in the base of a
fairly shallow flameproof dish. Whisk together the quark, eggs, lime
rind and caster sugar in a basin. Stand the basin over a pan of hot
water and cook, stirring, until the mixture thickens. Spoon over the
kiwi fruit, leave to cool, then chill. Sprinkle a thick layer of
granulated sugar over the quark custard to cover completely. Place
under a hot grill (broiler) until the sugar melts and caramelizes.
Chill again until hard.
