Kiwi Quark Brulee Dessert Recipe

Ingredients: Serves 6

4 kiwi fruit, sliced
225 g/8 oz/1 cup quark
3 eggs
Finely grated rind of 1 lime
30 ml/2 tbsp caster (superfine) sugar

Granulated sugar


Put the kiwi fruit in the base of a fairly shallow flameproof dish. Whisk together the quark, eggs, lime rind and caster sugar in a basin. Stand the basin over a pan of hot water and cook, stirring, until the mixture thickens. Spoon over the kiwi fruit, leave to cool, then chill. Sprinkle a thick layer of granulated sugar over the quark custard to cover completely. Place under a hot grill (broiler) until the sugar melts and caramelizes. Chill again until hard.
