Enriched Bread Pudding Recipe

Ingredients: Serves 6-8

100 g/4 oz wholemeal bread, cubed

150 ml/0.25 pt cup milk
3 eggs, lightly beaten
50 g/2 oz/0.25 cup dark brown sugar

5 ml/1 tsp ground cinnamon
5 ml/1 tsp grated nutmeg
5 ml/1 tsp ground mace
175 g/6 oz/1 cup dried mixed fruit (fruit cake mix)
20 g/0.75 oz/1.5 tbsp butter, melted
Caster (superfine) sugar, for sprinkling

Cream or custard, to serve


Put the bread in a bowl. Add the milk and leave to soak for 30 minutes. Beat well with a fork. Mix in the eggs, sugar, spices and fruit. Brush a 1.5 liter/ 2.5 pt/6 cup ovenproof dish with some of the butter. Turn the mixture into the dish and level the surface. Drizzle with the remaining butter. Bake in a preheated oven at 180C/350F/gas mark 4 for about 1 hour or until golden brown and set. Allow to cool slightly, sprinkle with caster sugar and serve cut into squares with cream or custard.
