50 g/2 oz soft margarine
50 g/2 oz caster (superfine) sugar
2 eggs
50 g/2 oz plain (all-purpose) flour
150 ml milk
Warmed jam (conserve) or clear honey
Sifted icing (confectioners') sugar, for
dusting
Method:
Beat together the margarine, sugar, eggs
and flour until smooth, then stir in the milk (don't worry if it
curdles). Grease the 12 sections of a bun tin (muffin pan). Spoon in
the mixture and bake in a preheated oven at 200°C/400°F/gas mark 6 for
15-20 minutes until set and golden. They will sink when they come out
of the oven — but they're supposed to! Arrange three on each of four
serving plates. Spoon a little warmed jam or clear honey over and dust
with icing sugar before serving.
