Vanilla Custard Pizza Filling Recipe

Ingredients: Enough for one 23 cm/9 in pizza

15 g/0.5 oz/2 tbsp plain (all-purpose) flour
25 g/1 oz/2 tbsp granulated sugar

1 egg, beaten
150 ml/0.25 pt milk
1.5 ml/0.25 tsp vanilla essence (extract)

Method:

Blend the flour and sugar in a saucepan. Whisk in the egg and a little of the milk. Stir in the remaining milk. Bring to the boil and cook for 2 minutes, stirring all the time. Add the vanilla essence, cover with a circle of wetted greaseproof (waxed) paper and leave to cool. Spread over the pizza base and add your chosen topping.
