West Country Apple Cake Recipe

West Country Apple Cake Recipe

Ingredients: Serves 8-10

3 large cooking (tart) apples, sliced
3 eggs
250 g/9 oz/generous 1 cup caster (superfine) sugar
100 g/4 oz/0.5 cup margarine
150 ml/0.25 pt cider
200 g/7 oz/1.75 cups plain (all-purpose) flour
15 ml/1 tbsp baking powder
1.5 ml/0.25 tsp ground cloves
Hot Lemon Sauce, to serve

Method:

Put the apple slices in cold water to prevent browning. Whisk together the eggs and 225 g/8 oz/1 cup of the sugar until thick and pale and the whisk leaves a trail when lifted out of the mixture. Melt the margarine in a saucepan with the cider. Bring to the boil and stir into the eggs and sugar. Sift the flour and baking powder over the surface and fold in with a metal spoon. Pour into a greased and floured roasting tin (pan). Lay the apple slices attractively over.

Mix the remaining sugar with the ground cloves and sprinkle over. Bake in a preheated oven at 200C/400F/gas mark 6 for about 40 minutes until golden and the centre springs back when lightly pressed. Cut the cake into squares and transfer to warmed serving plates. Serve with Hot Lemon Sauce.
