60 ml/4 tbsp lemon juice
10 ml/2 tsp liquid sweetener
Finely grated rind and juice of 2 oranges
250 ml frozen concentrated orange juice,
thawed
2 egg whites
Method:
Mix together the lemon juice and
sweetener and make up to 600 ml with water. Add the orange rind and
juices and mix well. Pour into a freezer-proof container and freeze
for 2 hours until just firm. Whisk with a fork to break up the ice
crystals. Whisk the egg whites until stiff and fold into the mixture
with a metal spoon. Freeze until firm. Transfer to the fridge about 20
minutes before serving to soften slightly.
