Put the lemon rind, juice, water and
honey in a saucepan. Bring to the boil and boil until thick and
syrupy. Remove from the heat. Whisk the egg whites until stiff.
Gradually whisk in the syrup and continue whisking until the mixture
is cold. Whip the cream and fold into the mixture. Turn into a
freezer-proof container and freeze until half frozen. Whisk thoroughly
with a fork to break up the ice crystals, then freeze again until
firm. Serve in dishes with Cigarettes Russes.
