Lemon Velvet Recipe

Ingredients: Serves 4

1 packet of lemon meringue pie filling mix
300 ml water
Grated rind and juice of 1 small lemon OR 20 ml/4 tsp bottled lemon juice

150 ml cold milk
1 sachet of Dream Topping mix

Crystallized (candied) lemon slices, to decorate

Method:

Blend the pie filling with the water in a saucepan. Bring to the boil, stirring, until thickened. Stir in the lemon rind and juice and leave until cool. Put the cold milk in a bowl and whisk in the Dream Topping until thick and fluffy. Fold into the cold lemon mixture. Spoon into four glasses and decorate each with a crystallized lemon slice.
