Apples and Oranges Bristol Fashion Recipe

Ingredients: Serves 4-6

90 ml/6 tbsp granulated sugar

300 ml water
4 eating (dessert) apples, peeled, quartered and cored
4 oranges

Method:

Put the sugar and water in a saucepan and heat gently until the sugar has melted. Add the apple quarters and poach for 5 minutes until translucent. Remove from the heat and leave to cool in the syrup. Thinly pare the rind from two of the oranges. Cut the rind into very thin strips. Boil in water for 3 minutes, then drain, rinse with cold water and drain again. Cut all the pith and rind from all the oranges and slice the fruit. Add to the syrup with any juice. Leave until cold, then turn into a serving dish and chill. Serve with the orange rind scattered over.
