300 ml water
90 ml/6 tbsp granulated sugar
4 eating (dessert) apples, peeled, quartered and cored
4 pears, peeled, quartered and cored
Thinly pared rind and juice of 1 lemon |

Method:
Put the water in a saucepan with the
sugar and heat gently, stirring, until the sugar has dissolved. Add
the apple and pear quarters and poach for 5 minutes until translucent.
Remove from the heat and leave to cool in the syrup. Cut the lemon
rind into thin strips. Boil in water for 3 minutes, then drain, rinse
with cold water and drain again. Add the lemon juice to the fruit and
turn into a serving dish. Chill. Sprinkle with the lemon rind before
serving.
