Macedoine Recipe

Ingredients: Serves 6

2 nectarines, sliced
1 ripe galia melon, balled or cubed

100 g/4 oz strawberries, sliced

100 g/4 oz raspberries
100 g/4 oz caster (superfine) sugar
30 ml/2 tbsp orange liqueur
Dry white wine
Pouring cream, to serve

Method:

Layer the fruits in a glass dish with a little of the sugar and a sprinkling of the orange liqueur between each layer. Pour over just enough wine to cover the fruit. Chill for at least 2 hours but no more than 4 hours. Serve very cold with pouring cream.
