225 g/8 oz fresh or frozen loganberries
45 ml/3 tbsp brandy
15 ml/1 tbsp water
Icing (confectioners') sugar
Gently stew the loganberries in the
brandy and water for about 8 minutes. Puree in a blender or food
processor, then pass through a sieve (strainer) to remove the seeds.
Sweeten to taste with sifted icing sugar and serve cold.
