Butterscotch Sauce Recipe

Ingredients: Serves 4

25 g/1 oz/2 tbsp butter
100 g/4 oz light brown sugar

15 ml/1 tbsp cornflour (cornstarch)

150 ml milk
2.5 ml vanilla essence (extract)


Put the butter and sugar in a saucepan and heat gently until the sugar has melted. Boil for 1 minute. Blend the cornflour with a little of the milk. Stir the remaining milk into the sugar and butter and bring to the boil, stirring. Pour over the cornflour, stirring. Return to the pan and bring to the boil. Cook for 2 minutes, stirring all the time. Stir in the vanilla essence. Serve hot.
