Greek Style Yoghurt Recipe

Ingredients: Makes about 600 ml / 1 PT / 2.5 cups

600 ml/1 pt plain yoghurt

30 ml/2 tbsp single (light) cream

Method:

Line a nylon sieve (strainer) with kitchen paper (paper towels) and place over a bowl. Tip the yoghurt into the sieve and chill overnight. The whey will drip into the bowl. Turn the thick yoghurt into a clean bowl and whisk in the cream. Chill until ready to use. Serve plain, with honey or with fresh fruit.
