300 ml water
60 ml/4 tbsp clear honey
4 pears, peeled, quartered and cores removed
1 packet of lime-flavored jelly (Jello)
Maraschino cherries, drained thoroughly
300 ml apple juice
Creme fraiche, to serve
Put the water and honey in a saucepan.
Finely grate the rind and squeeze the juice from one of the limes and
add to the pan. Add the pear quarters and simmer gently until the
pears look almost transparent and are just tender. Leave until cold.
Strain off the liquid and, if necessary, make up to 300 ml with water.
Return the liquid to the saucepan. Add half the jelly and heat until
dissolved. Pour this mixture into a round glass serving dish and chill
until set. Arrange the pears in a starburst pattern over the top and
decorate in between with halved maraschino cherries. Meanwhile,
dissolve the remaining jelly in the apple juice. Leave until cold but
not set. Pour gently over the pears and cherries and chill until set.
Serve with creme fraiche.
