Butterscotch Beauty Recipe

Ingredients: Serves 6

30 ml/2 tbsp cornflour (cornstarch)

300 ml milk
150 ml double (heavy) cream

5 ml/1 tsp vanilla essence (extract)

50 g butter
100 g light brown sugar

1 Basic Pastry Flan Case, baked
50 g peanut brittle, crushed, to decorate


Blend the cornflour and milk in a saucepan with the cream and vanilla essence. Bring to the boil and cook for 1 minute, stirring, until thickened. Melt the butter and sugar in a saucepan. Stir into the custard. Pour into the flan case and chill until set. Decorate with crushed peanut brittle just before serving.
