75 g caster (superfine) sugar
2 eggs
Finely grated rind and juice of 1 large lemon
25 g/1 oz/2 tbsp unsalted (sweet) butter, melted
1 Basic Pastry Flan Case,
baked
75 ml/5 tbsp double (heavy) cream, whipped
30 ml/2 tbsp toasted chopped nuts |

Method:
Beat together the sugar, eggs, lemon
rind and juice and the melted butter. Pour into the flan case (pie
shell). Bake in a preheated oven at 180°C/350°F/gas mark 4 for about
15—20 minutes until set. Leave to cool, then chill before decorating
with whipped cream and chopped nuts.
