Crepes au Chocolat Recipe

Ingredients: Serves 4 or 8

1 quantity of Simple Pancakes
8 strawberries
60 ml/4 tbsp kirsch
300 ml whipping cream

60 ml/4 tbsp drinking (sweetened) chocolate powder
60 ml/4 tbsp grated chocolate
Icing (confectioners') sugar, for dusting

Method:

Make the pancakes. Cut the strawberries in several slices from the point to the calyx, not quite right through and gently pull so they fan out. Place in a bowl and sprinkle with the kirsch. Whip the cream with the drinking chocolate and grated chocolate. Spread on the cold crepes, roll up and top each with a kirsch-soaked strawberry. Dust with icing sugar and serve straight away.
