Nutty Apple Doughnuts Recipe

Ingredients: Makes 8-10

1 large cooking (tart) apple, grated

65 g caster (superfine) sugar
225 g/8 oz/2 cups self-raising (self-rising) wholemeal flour
15 ml/1 tbsp baking powder
2.5 ml mixed (apple-pie) spice

50 g/2 oz butter or margarine, melted
60-75 ml/4-5 tbsp milk
Oil, for deep-frying


Put the apple in a bowl with 15 ml/1 tbsp of the caster sugar and the flour, baking powder and spice. Mix well. Stir in the melted butter or margarine and enough of the milk to form a soft but not sticky dough. Knead gently on a lightly floured surface. Roll out thickly and cut into 8-10 rounds using a 7.5 cm/3 in cutter. Cut out the centers using a 3 cm/1.5 in cutter. Re-roll the cuttings and make more rings. Deep-fry in hot oil for 3-4 minutes until golden brown and cooked through, turning once. Drain on kitchen paper (paper towels). Toss in the remaining caster sugar and serve warm.
