Pineapple Fritters Recipe

Ingredients: Serves 4

100 g/4 oz/1 cup plain (all-purpose) flour, plus extra for dusting
2.5 ml baking powder
A pinch of salt
150 ml water
8 fresh or drained canned pineapple rings
Oil, for deep-frying
Maple or golden (light corn) syrup and ice cream, to serve

Method:

Put the flour, baking powder and salt in a bowl. Make a well in the centre and gradually work in the water. Dry the pineapple rings on kitchen paper (paper towels), then dust with a little flour. Dip in the batter and deep-fry in hot oil until crisp and golden brown. Drain on kitchen paper (paper towels) and serve hot with syrup and ice cream.
