Saucy Apple Pancakes Recipe

Ingredients: Serves 4

1 quantity of Simple Pancakes
750 g cooking (tart) apples, sliced

75 ml/5 tbsp water
50 g/2 oz light brown sugar

2.5 ml ground cinnamon

50 g/2 oz raisins
75 ml/5 tbsp lemon jelly marmalade


Make the pancakes and keep warm on a plate over a pan of hot water. Put the apple slices in a pan with 50 ml of the water and the sugar. Cover and cook gently, stirring occasionally, for about 15 minutes until pulpy. Stir in the cinnamon and raisins. Put the marmalade and the remaining water in a small saucepan and heat gently, stirring, until melted. Divide the filling between the pancakes and roll up. Transfer to warmed plates and drizzle the lemon sauce over.
