Method:
Make the pancakes and keep warm on a
plate over a pan of hot water. Put the apple slices in a pan with 50
ml of the water and the sugar. Cover and cook gently, stirring
occasionally, for about 15 minutes until pulpy. Stir in the cinnamon
and raisins. Put the marmalade and the remaining water in a small
saucepan and heat gently, stirring, until melted. Divide the filling
between the pancakes and roll up. Transfer to warmed plates and
drizzle the lemon sauce over.
