Strawberry and Cream Pancakes Recipe

Ingredients: Serves 4

1 quantity of Simple Pancakes
515 g/1 very large can of strawberries
30 ml/2 tbsp cornflour (cornstarch)

Finely grated rind and juice of 1 orange

150 ml double (heavy) cream, whipped


Make the pancakes and keep warm on a plate over a pan of hot water. Empty the strawberries and juice into a pan. Blend the cornflour with the orange rind and juice and stir into the pan. Bring to the boil and cook for 2 minutes, stirring. Divide between the pancakes, roll up and place on serving plates. Top with a large spoonful of whipped cream and serve straight away.
