Method:
Make the pancakes. Spread each with a
little of the soft cheese and fold into quarters. Turn the pie filling
into the flying pan (skillet) and add the water and lemon juice. Heat
until bubbling, stirring all the time. Add one pancake, bathe in sauce
and push to one side of the pan before adding the next. When all the
pancakes are in the pan, pour over the cherry brandy or kirsch and
ignite. Shake the pan gently until the flames subside, then serve
straight away.
