Boozy Chocolate Mousse Recipe

Ingredients: Serves 6

200 g/7 oz plain (semi-sweet) chocolate
3 eggs, separated
15-30 ml/1-2 tbsp brandy
150 ml double (heavy) cream

Coarsely grated chocolate, to decorate


Melt the chocolate over a pan of hot water (or in the microwave). Beat in the egg yolks and brandy. Whisk the egg whites until stiff, then the cream in a separate bowl until peaking. Fold the cream, then egg whites into the chocolate mixture. Turn into a glass serving dish and chill until firm. Sprinkle with coarsely grated chocolate before serving.
