Chocolate Mousse Recipe

Ingredients: Serves 6

4 eggs, separated
200 g/7 oz plain (semi-sweet) chocolate
75 ml/5 tbsp strong hot coffee
2.5 ml vanilla essence (extract)

A little whipped cream and grated chocolate, to decorate

Method:

Whisk the egg whites until stiff. Break up the chocolate and place in a food processor or blender. Run the machine until the chocolate is completely crushed. Add the hot coffee and continue running the machine until the mixture is smooth. Add the egg yolks and vanilla essence and blend for a further 1 minute. Pour the chocolate mixture slowly over the whites and fold in lightly but thoroughly. Spoon into six individual dishes or a large serving dish and chill until set. Top with a little whipped cream and a sprinkling of grated chocolate.
