Chip Cookie Gateau Recipe

Ingredients: Serves 4-6

45 ml/3 tbsp port
45 ml/3 tbsp brandy
200 g/7 oz/1 small packet of chocolate chip cookies
450 ml/2 cups whipping or double (heavy) cream, whipped
Grated chocolate, to decorate

Method:

Mix together the port and brandy. Dip the biscuits in the mixture, then sandwich together with three-quarters of the whipped cream. Place on a serving plate and spread the remaining cream over. Sprinkle with grated chocolate. Chill for at least 3 hours to allow the flavors to develop.
