Gingered Melon Recipe

Ingredients: Serves 4

1 honeydew melon
15 ml/1 tbsp finely chopped crystallized (candied) ginger
5 ml/1 tsp grated fresh root ginger
250 ml/8 fl oz/1 cup dry white wine
5 ml/1 tsp ground cinnamon
15 ml/1 tbsp caster (superfine) sugar

Brandy Snaps and creme fraiche, to serve


Peel the melon, cut into eight wedges and discard the seeds. Place the remaining ingredients in a saucepan and bring to the boil. Add the melon, cover and cook for 2 minutes. Remove the melon wedges and place on warmed serving plates. Keep warm. Boil the liquid rapidly until syrupy, then spoon over the melon. Serve with Brandy Snaps and creme fraiche.
