Method:
Roll out the pastry to a 25 cm/10 in
round and place on a dampened baking (cookie) sheet. Bake in a
preheated oven at 190°C/375°F/gas mark 5 for about 6 minutes until
lightly golden. Remove from the oven and leave to cool while making
the topping.
Melt the butter in a frying pan (skillet) and add the sugar. Stir
until the mixture begins to turn golden, then add the pear slices and
toss until they caramelize. Add a little water if they start to stick
(be careful as the mixture will splutter). Arrange the pear slices
over the pastry and dot with the cheese. Return to the oven for
15 minutes until the pastry is well risen and the pears are a rich
golden brown. Serve warm with vanilla ice cream.
