Jam Tart Recipe

Ingredients: Serves 4-6

175 g/6 oz/1.5 cups plain (all-purpose) flour
A pinch of salt
75 g/3 oz hard block margarine, diced
Cold water, to mix
90 ml/6 tbsp jam (conserve)


Sift the flour and salt in a bowl. Add the margarine and rub in with the fingertips until the mixture resembles fine breadcrumbs. Mix with enough cold water to form a firm dough. Knead gently on a lightly floured surface. Roll out and use to line a 20 cm/8 in pie plate. Trim the edge and decorate with the prongs of a fork. Spread the jam in the centre of the pastry. Bake in a preheated oven at 200C/400F/gas mark 6 for about 20 minutes until the pastry is golden and the jam is bubbling. Serve warm or cold.
