Last-Minute Mincemeat Recipe

Ingredients: Makes 900 g/2 lbs

1 large cooking (tart) apple, quartered

100 g/4 oz currants
100 g/4 oz raisins
100 g/4 oz sultanas (golden raisins)
50 g/2 oz chopped mixed (candied) peel
100 g/4 oz/1 cup shredded (chopped) vegetable suet
225g/8 oz/1 cup light brown sugar

2.5 ml/0.5 tsp mixed (apple-pie) spice

30 ml/2 tbsp brandy or rum

Method:

Pass the apple, dried fruit and peel through a coarse mincer (grinder). Stir in the remaining ingredients. Pot, cover and store in the fridge for up to 2 weeks.
