Black Cap Pudding Recipe

Ingredients: Serves 4

Butter, for greasing
15 ml/1 tbsp clear honey
50 g/2 oz raisins
100 g/4 oz/1 cup plain (all-purpose) flour
A pinch of salt
2 eggs
300 ml milk
25 g/1 oz/2 tbsp caster (superfine) sugar

Method:

Grease a 900 ml/1.5 pt pudding basin. Put the honey in the base, then add the raisins. Sift the flour and salt into a bowl. Beat in the eggs and half the milk until smooth, then stir in the remaining milk and the sugar. Pour over the raisins. Cover with a double thickness of greased greaseproof (waxed) paper or foil and steam for 1.5 hours.
