Sinful Chocolate Pudding Recipe

Ingredients: Serves 6

175 g/6 oz butter
150 g/5 oz light brown sugar

5 ml/1 tsp vanilla essence (extract)

3 eggs
45 ml/3 tbsp cocoa (unsweetened chocolate) powder
25 ml potato flour
100 g/4 oz/1 cup self-raising (self-rising) flour
75 g/3 oz plain (semi-sweet) chocolate, coarsely grated

Method:

Grease a 1.25 liter pudding basin with a little of the butter. Beat the remaining butter with the sugar and vanilla until light and fluffy. Gradually beat in the eggs, beating well after each addition. Sift the cocoa, potato flour and self-raising flour over the surface and fold in with a metal spoon. Fold in the chocolate. Turn into the prepared basin. Cover with a double thickness of greased foil or greaseproof (waxed) paper and steam for 1.5 hours. Turn out and serve.
