Spotted Dog Recipe

Ingredients: Serves 6

225 g/8 oz/2 cups self-raising flour
100 g/4 oz/1 cup shredded (chopped) vegetable suet
A pinch of salt
40 g/1 1/2 oz/3 tbsp caster (superfine) sugar
100 g/4 oz/2/3 cup sultanas (golden raisins)
135 ml/4 1/2 fl oz/generous 1/2 cup milk

Plain (all-purpose) flour, for dusting Syrup Sauce (see page 347), to serve


Mix together all the ingredients to form a soft but not sticky dough. Place on a double thickness of greaseproof (waxed) paper, dusted with a little plain flour, and shape into a roll. Roll up in the paper and tuck in the ends. Wrap in a double thickness of foil twisting and folding the ends to secure completely. Steam for 2 hours. Unwrap and transfer to a serving plate. Serve sliced with syrup sauce.
