Reserve half the strawberries for
decoration and mash the remainder. Sprinkle with the sugar. Whip the
cream until peaking and fold in the mashed strawberries. Spoon into
the flan case (pie shell). Slice the remaining strawberries and
arrange all over the strawberry cream. Melt the redcurrant jelly and
water in a saucepan and bring to the boil. Brush all over the
strawberries and chill before serving.
