Christmas Pancakes Recipe

Ingredients: Serves 4

1 quantity of Simple Pancakes
350 g/12 oz/1 medium jar of mincemeat

15 ml/1 tbsp brandy
2 apples, grated
Icing (confectioners') sugar, sifted

Greek-style Yoghurt (or use bought), to serve

Method:

Make the pancakes and keep warm on a plate over a pan of hot water. Mix the mincemeat with the brandy and apple. Spread over the pancakes and roll up. Place in a flameproof dish. Sprinkle liberally with icing sugar and flash under a hot grill (broiler) until the top begins to caramelize. Serve with Greek-style Yoghurt.
